Day 3... I haven't killed anyone yet so all is well :)

Sunday's food intake:
Breakfast: puffed rice cereal with blueberries and unsweetened almond milk (I swear it's actually great!)
Lunch: Ezekial raisin bread, toasted with smart balance
Mid Afternoon: A handful of carrots and celery dipped in pine nut hummus
Dinner: My veggie casserole which has the following vegetables layered:
- sliced sweet potato
- sliced zucchini
- fried onion (fried in olive oil)
- tomato
- barely stir fried red bell pepper
spices: just a little salt, pepper, and garlic powder. You don't need much in the way of spices because the fried onions do a great job flavoring everything.
Here is a photo of my creation
My food intake was healthy today. I got my crunch fix from the Ezekial bread. I had a touch of sweetness from the blueberries, and I had my need to dip things met with the carrots/celery and hummus. Dinner was just plain healthy and somewhat filling although not satisfying. Knowing ahead of time that this particular meal is fine but leaves you feeling somewhat unsatisfied, I have my cashew milk based gelato on hand for a very satisfying nightcap. I will have just a taste (although I'd love to finish the whole pint...)
As for my activity level today, I started out the day by weeding for 20 minutes and running from mosquitoes as I mentioned yesterday. Then Rick, Dan and I went "speed bowling" and I was sweating like a whore in a confessional right after "Anal Sex and Hummer Week".
About 7:45pm Rick and I decided to go out and work on weeding the garden some more... I'm all hot and sweaty now.. ugh. The more active we are the better!
